Baked Oatmeal Bites

I have been on the hunt for new breakfast ideas (well all meals actually) for Miss M.  She is being pretty selective lately about what she wants to eat, and we need more variety in our lives!  Most mornings we are running out the door and while I try to sit and have breakfast with her, it needs to be prepped in advance.  These baked oatmeal bites are perfect.  They keep great for 5 days in an airtight container, you can eat them cold, or you can heat them up and add milk.  They are delicious!  This is a basic recipe, but you could add extras to it if you wanted, like dried fruit, walnuts, chia seeds, flax, whatever you want!

Ingredients

-3 cups oats (quick cooking or regular)
-1/2 cup brown sugar
-2 teaspoons baking powder
-1/2 tsp salt
-1 1/2 tsp cinnamon
-2 eggs
-1 cup milk
-1 medium mashed banana
-1/2 cup melted butter

Directions

Preheat oven to 350 degrees. Combine all dry ingredients (Oats, brown sugar, baking powder, salt, and cinnamon) in one large bowl.  In a separate bowl beat 2 eggs, add milk, banana, and melted butter.  (add milk and banana first, if you add hot butter to the eggs, you will have scrambled eggs!)  Stir the wet ingredients in the dry ingredients until well combined.

Spray a mini muffin tin and spoon mixture into each.  Fill each 3/4 full.  Bake for 15 minutes.

If you want to use a regular size muffin tin, you can make short, flat ones.  I only fill the bottom, and these bake for about 17 minutes.

Recipe makes 36-40.
